I like my muffins to rise really well (since that is the main downfall of
most coconut flour recipes), so I'll add a bit of baking soda.
I'm afraid I can't advise you on preservatives (I don't use any) and
because coconut flour recipes call for a high amount of eggs, I only keep baked recipes fresh for up to 3 days.
