Made it with dried cranberries instead of pears, took a hint from another wild rice recipe and used some apple cider and veg stock for the liquid, and button / «baby bella» mushrooms with a small pack
of dried wild mushrooms.
So funny, I had pulled out some brown rice and
dried wild mushrooms earlier to see if I could cobble together a pilaf, and was going to use up some lemongrass with them.

I make a quick compound butter (
dried wild mushrooms, dried or fresh herbs, citrus zest), and put about a tablespoon under each half of the breast, then a bit more on the thighs.
