If you can't find
fresh lemongrass, substitute a couple of sliced garlic cloves and the grated zest from half a lime instead.
Or, if
fresh lemongrass is not immediately available for a Thai curry, should the cook substitute powdered lemon grass, or use a bottled curry paste containing fresh lemongrass?
In order to use
the fresh lemongrass you need to first peel off the tough outer layers to get to the softer, flavourful part of the plant.
