But I tried to use the techniques it called for, and the only substitution I made was

for instant yeast too but there was nothing on your recipe that says about activating the yeast... Please clarify.
For my next bake, I decided to add a minimal amount of
dried instant yeast to reduce the waiting time for proving and this is what I did.
However, I also modified recipes slightly when using instant,
because instant yeast has to be mixed with the flour, and not the liquid in the recipe.
I used
fresh instant yeast packets I bought at the store today and used the correct temperature of water.

Some sources say active dry yeast can now be added to dry ingredients just
like instant yeast but I haven't had success with this.
Then add the dry ingredients on top in this order: salt, sugar, milk powder, bread flour, cake flour and
lastly instant yeast.

It's different
from instant yeast (often sold as «rapid rise»), so be careful not to confuse the two, even though the packaging often looks similar.
