The nutrition profile
of kaniwa closely resembles that of quinoa, and they are both gluten free.

part kaniwa and 2 parts water over low heat for 15 - 20 minutes.
While quinoa softens when cooked, and its fluffy texture makes it ideal for replacing rice in many recipes,
kaniwa doesn't puff up after cooking, but retains its size and texture.
If kaniwa is hard to find, substitute with the same amount of quinoa, and keep the liquid - to - solid ratio the same.
But you can
use kaniwa interchangeably with quinoa in recipes.
You might find it in Sprouts, or Wholefoods, sometimes under the name of «baby quinoa», and if that doesn't work, you can always
buy kaniwa online.
In fact, the first time I
saw kaniwa at the bulk section of my local Sprouts store, I thought it was a variety of tiny red quinoa, and they misspelled the name.
Place kaniwa, with 1/2 cup water in a pot, with a pinch of salt, and bring to a boil.
Pairing kaniwa with a fresh veggie stirfry or tossing into a whole grain salad means you're getting a great superfood meal.
Just like quinoa,
when kaniwa is done cooking, the little tails will appear.
My family really likes quinoa, so I look forward to
trying kaniwa.
