If I were to add it, I'd probably do so when mixing
levain with water and flour to make the dough.
We also make a «giant» version of
levain as well as a version that contains 3/4 whole what flour that is a bit denser than the orignal.

And last, but not least, if you've made these and they have sat in an airtight container, or are no longer still just a little warm from the oven, you really should reheat them ever - so - slightly to get the
true Levain texture and taste.
I used a
crusty levain & found that bread to be a little too «sturdy» for a pudding.
