"lime rind" refers to the outer skin or peel of a lime fruit.

Grated lime rind Instructions: Line a square cake tin with baking paper and set aside.
After tasting it I added
more lime rind and coconut milk (also used full fat as it is what I had on hand).
I grated
the lime rind into the fruit as well.
