of medjool dates with it be ok?
My topping came out slightly sloppy, which is probably because I used less of the middle layer to make the top layer than I should have done and did not use
medjool dates in the top layer.
I use fresh
medjool dates as they are nice and moist and have a wonderful caramel flavour.

I couldn't
find medjool dates at my grocery store so I used deglet noor dates; my blender nor my food processor could handle them so I took them to the mortar and pestle and smushed them up the old fashioned way, then added the paste to the remaining mixture.
Cover dates with just enough hot water to cover and allow to soak for 15 minutes
Add medjool dates, flax and 2 tablespoons of date water to a food processor and process until chopped.
So I try to keep my snacks small when I'm in that kind of mood... something like a few
medjool dates stuffed with almond butter.
Smaller, deglet dates will also work in this recipe, but you'll need to soak them first since they're not as gooey as
Medjool dates so they won't mix up quite as easily.
