substitute other seasonal vegetables (e.g., cauliflower, winter squash, and even root vegetables such as turnips, parsnips, or celery root) for the zucchini throughout the year.
Here I have added some particular seasonal vegetables but you are free to add
any other seasonal vegetables what you like.
