Bake the cake (or cupcakes) as directed on box (I used coconut oil in place of the butter, and almond milk
in place of regular milk, and 2 eggs) yield is around 34 mini cupcakes
One is, if you do have buttermilk, you can use buttermilk in
place of regular milk or use a combination of the two.
Use lactose - free milk in
place of the regular milk and voila!
However the Apple cider vinegar helps these to rise so I would suggest using lemon juice as a replacement or using buttermilk in
place of regular milk.
I used Earth Balance in the place of butter and coconut milk in
place of regular milk.
So I cut that back a little and added a pinch of baking soda and used half buttermilk in
place of regular milk.
Using buttermilk in
place of regular milk is a simple way to add unexpected complexity and a lip - smacking depth of flavor to other desserts and sweets, like pie and ice cream.
I also added 1 tsp of baking soda and used laban (fermented yogurt / milk) in
place of regular milk.
You can use soy milk, rice milk, coconut milk, and almond milk in
place of regular milk.
