A bonus with making gluten - free pie crust is that you don't really have to worry as much about over-working the dough which develops the gluten
in regular pie crusts.
I have trouble
with regular pie crusts... and oftne use the leftovers as a way to make it pretty with leaves and such... yours came out beautifully!
Oh, and (as
with regular pie crust / pastry dough) try to work quickly or put your dough back in the fridge for 15 minutes if it begins to warm up too much.
I would suggest making or purchasing
a regular pie crust for this one (I think it would taste better as well).
Cover them with foil just like you would
a regular pie crust to prevent over browning and knock your oven temp back 25 degrees.
Lower in fat and calories then
a regular pie crust and more nutrients if you use brown rice over white which I did this time.
If you are a pie maker you can make it with
a regular pie crust and it will be just as delicious

The «pie» would not be nearly as good with
a regular pie crust.
A traditional Greek phyllo is in fact more like
a regular pie crust.
This is higher in calories than
a regular pie crust, but lower carb and more nutritious.
The mixture is a lil too much for
a regular pie crust.
The combination of pecans and pumpkin seeds was a nice change - up from a basic chocolate pecan pie, but if I bake this one again I'll try it in
a regular pie crust.
* You can always bake this in
a regular pie crust — and just follow the instructions for the filling for the pecan pie.
