Before baking, I unwrap the logs and roll them
in sanding sugar so all the cookies have a sparkly halo (you can also use sprinkles or chopped nuts).
They're perfectly moist, thanks to the addition of buttermilk, and lightly sweetened with a touch of brown - rice syrup in the batter and a sprinkling of
sanding sugar on top just before baking.
I loved the spice flavor of this cookie and it's retro look by using different colors
of sanded sugar and sprinkles.
All general funfetti rules apply here: do not
use sanding sugar in the macaroon mixture because the colors will bleed and use clear imitation vanilla for that nostalgic birthday cake flavor that will also keep your batter bright white.
Coarse
yellow sanding sugar gives this baby bird a sparkly finish; tinting the frosting yellow instead would brighten it, too.
You can also swap out the lemon zest for orange zest and top the muffins with
coarse sanding sugar instead of regular for a more festive look.
For the lightening bolts, I mixed some yellow and
gold sanding sugar together and sprinkled it on top of white candy melts.

We dipped ours in a festive homemade turquoise icing made of icing sugar, milk and food colouring and sprinkled the tops with
matching sanding sugar.
