You'll want to use ripe fruit for this soup, so let your
melon sit out on the counter to concentrate the sugars and become aromatic before using.
Letting the frozen, sliced

You can also use yoghurt or buttermilk for the oats... or just use water and let
them sit out on the counter for 3 - 4 days before the recipe (for ambient lacto - bacilli to ferment the oats).
