I made the mistake of
using unsalted butter in my toffee today and got a separation anxiety and have never, ever had a problem before.
I am making them today
using unsalted butter as an experiment and I thought I'd leave a very appreciative post in the meantime.
I used rum emulsion instead of bourbon, just because I don't have bourbon, but I do have rum emulsion; I also

Just made the
cookies using unsalted butter, 3/4 cup of whole spelt flour (because I had only 3/4 cup of oats), and brown sugar (because I didn't have coconut sugar).
If using unsalted butter, heat in a small saucepan over medium, skimming off white foam that rises to the surface, until butter is melted and milk solids have settled to the bottom of the pan.
I know people go on and on about how important it is to
use unsalted butter when baking but, frankly, I don't think it really matters that much.
I used salted butter, I think next time I may
use unsalted butter or just keep the additional teaspoon of salt out next time!
If
you used unsalted butter, add a pinch of salt to taste.
I think I need to add more brown and white sugar to the topping, and definitely more salt, because

It even matters that one
uses unsalted butter to brush on the pan.
The recipe turned out perfectly, and I love the oat flour - although one suggestion is to be sure to
