Do you poach it separately or do you just break it on
top of the gratin and bake it?
Should you beat the eggs and mix in with the spinach or should you just crack them on
top of the gratin?
Pour the remaining béchamel sauce over the beets, scatter the remaining crumbled goat cheese and grated romano over
the top of the gratin and bake in the over for 20 - 25 minutes until the top is brown and the gratin is bubbling.
Grind a generous amount of black pepper all over
the top of the gratin, then serve.
Broil until cheese is bubbling and
top of gratin is golden brown, 5 — 10 minutes.
Remove the foil and continue baking another 20 - 30 minutes until the cauliflower is tender and
the top of the gratin is bubbly and lightly browned.
