made with tapioca, rice, potato and other starchy, low / no nutrition flours.

I'm wondering if the flour mix
with tapioca instead of potato starch is the culprit considering I actually weighed the flours for the book recipe.

experiment with tapioca or arrowroot or potato starch, or perhaps will be compelled to try many different versions!
However, the least amount of tapioca flour used in this recipe should be able to
replace with tapioca starch.
I have been using zucchini to make flat
breads with tapioca flour and just a little coconut flour, so this will be interesting.
If you don't exhibit signs and symptoms
with a tapioca tortilla (which admittedly, is not very likely) then that's by definition a food that your body can eat.

If you find that yours is a little tough to handle,
even with tapioca - floured hands, do freeze the dough for about 10 minutes, though.
