Place one triangle of
yufka dough on a work surface with the longer edge facing you, and brush with milk generously.
Even though quite old, my mother still had the desire and strength to roll the pin so the other day she made a small batch
of yufka for me.
however, i do recommend anyone who tries this recipe to
make yufka (turkish flatbread) as the base for this, it's really easy and not only is it how we eat lahmacun in turkey, it's the best tasting way to eat it too
In Turkey, börek is often made using sheets of very thin flatbread
called yufka.
An easy to make, skinny and delicious pumpkin pie with cinnamon and phyllo or
yufka pastry.
Because
yufka are not so easy to find unless you have a Turkish or Middle Eastern market near you, I've modified my original recipe to replace the yufka with phyllo dough sheets, which are available in most supermarkets (sometimes located in the freezer section).
Using a pizza cutter or a sharp knife cut
each yufka dough into 8 triangles.
Börek in Turkish language refers to any dish made with
yufka.
The market isn't just about fresh produce; shops sell everything a Turkish cook needs — olives, white cheese, olive oil, spices, herb teas,
yufka, the dough used for borek pastries, nuts, dried fruit, bulgur, lentils, and the Turkish ravioli called manti.
