Coconut water does not provide enough
nutrition for water kefir grains to reproduce so they will need to be rested in sugar water after every batch or so to renutrify.
To take a break from making Kefir, store the Kefir grains in the refrigerator for up to a week covered with sugar water (
for Water Kefir Grains) or milk (for Milk Kefir Grains).
From the information available, it appears that kefir (water or dairy) has about.5 % alcohol content in the standard fermentation period (
for water kefir this is 48 hours).
