I was simultaneously trying to study for an upcoming anatomy test and use up a
ridiculously large sweet potato that came in our CSA box — and I thought it turned out superb.
I peeled and steamed 1
large sweet potato with about a cup of pumpkin chunks — altogether, with the dates blended in, I got about 2 cups of the nommiest, most tasty and deeply textured sweetness.
