A blueberry muffin with homemade organic ghee for breakfast, and a chocolate chip muffin / cupcake
with melted coconut oil for dessert.
In a large bowl, use a handheld electric mixer to beat together 1 1/2 cup coconut sugar and 1/2
cup melted coconut oil until well combined.
When dough is almost ready, prepare filling ingredients by mixing
together melted coconut oil, brown sugar and cinnamon in a small bowl.
I tried it again this morning after
melting the coconut oil into the hot coffee and slowly pouring that into the already blended cold ingredients.
Gently
melt the coconut oil by placing it in a heat proof bowl set over a bowl of steaming water with the heat turned off.
In saucepan
melt coconut oil on low heat, add agave syrup, salt, and cinnamon, stir to combine.
You can also use
melted coconut oil instead of less less healthy oils that are commonly used in baked goods such as vegetable oil.
Meanwhile make the topping: Gently

Transfer the dough onto a well floured surface (you can actually also use a bit of
melted coconut oil if you want to avoid flour).
I added a tablespoon of
melted coconut oil so they didn't stick to my hands when I rolled them and also because I wanted to roll them in coconut.
If you are using
completely melted coconut oil, you will need to stir several times while the mixture cools to keep the baking soda incorporated.
It's just as easy to make, simply place all the ingredients into a blender, blend until smooth then pour in
melted coconut oil while the motor is running.
To make the
topping melt coconut oil and cacao butter, add cacao powder and stir until there is no lumps... Drizzle on top of slice and set in the fridge or freezer.
