As the lentils cook, whole spices like cinnamon sticks and cardamom pods are fried in oil to
make tadka — a seasoned and deeply flavored oil that makes the topping for a healthy and comforting Indian dinner you should be having all the time.
But they do not consume it like soup rather they have it as main course dish like dal fry,
dal tadka etc and they prefer this to have with rice or roti (Indian bread).

As a final touch pour a
simple tadka of ghee and a pinch of hing (asofoetida) and more Kashmiri red chili powder if desired.

To make
the tadka, or tempering, heat the oil in a pan.
It simply tastes awesome by adding tomatoes into the dal and also enhances the real flavor with
the tadka or tempering.
Open the lid and pour
the tadka on khichdi.
Heat the ghee in a pan add cumin seeds let them crackle then add garlic, onion fry until golden add broken whole red chili and switch off the flame quickly, reserve
some tadka for garnish.
I added a bit of chopped ginger while preparing
my tadka for this garlic chutney.
Make
