I tried pressing with my body weight, beating with a meat mallet and
even taking them out of the pan and rolling them with a rolling pin on parchment paper.
I was so excited to make this cake for my moms birthday tomorrow because its her favorite and she asked for it... I followed the recipe to the T. Everything tasted delicious but when after I cooled the cakes and
took them out of the pan they crumbled to pieces... sigh...
The next afternoon
I took it out of the pan, carefully and painstakingly pulled off the parchment paper and sprinkled on some white sugar.

I didn't have whiskey so used brandy and from what I could taste from the crumbs as
I took it out of the pan it's just a good as ever!
The nuts don't stick in, most of the coconut stays in, but regardless, when
I take them out of the pan they fall apart.
It goes from aromatic and golden brown to burnt in seconds, so I immediately pull them off when they smell and look good and
take them out of the pan.
Presumably
you take them out of the pans / tins before you freeze them, so when you come to use them do you put them back into the pans / tins to cook the flan or quiche mixture?

I've found that gluten - free baked goods are much more fragile and allowing them to set up a bit makes it less likely that you will squash or break one
