One of the best things about
working with coconut flour is that you don't have to knead it.
Don't skip this step or else they could get pretty soggy, if you have
worked with coconut flour before you know how well it soaks up liquids.
One good thing about
working with coconut flour (and almond flour) is that they don't contain gluten so over-mixing is usually not an issue.
