I've had some
trouble with coconut whipped cream lately though — it seems all the producers have added emulsifiers like guar gum and it doesn't separate properly anymore — any advice?
You could replace the pastry
cream with coconut whipped cream (so delicious makes a premade version) but it will not be as rich in flavor as if you use the vanilla pastry cream, and the end result will be a bit drier.
