I don't do great with dairy but adore cheese and think life's too short, so I tried those out and the
raw goat cheddar cheese gives me no problem!
It is a grilled burger topped
with goat cheddar, balsamic peppers, lettuce, onion, tomato and avocado.
I also
used goat cheddar and pecorino Romano (sheep's milk cheese) to avoid cow's milk.
Top each serving with
shredded goat cheddar, and place the baking sheet under your oven's broiler, set to high, for about 3 minutes, or until the cheese is melted and bubbly.

raw goat cheddar cheese, divided 1 garlic clove smashed Optional: Dried herb such as thyme or oregano
Top
with goat cheddar, then add tomatoes, green pepper, jalapeño, black beans and walnut meat.

A couple of substitutions and additions: instead of the cow's milk cheeses in the recipe, I used every goat and sheep's milk cheese I had on hand including Manchego, Pecorino Romano, chevre, and
goat cheddar.
