With dough hook attached,
turn on stand mixer and slowly add in dry ingredients until incorporated.
Directions said to do 12 minutes or
so on a stand mixer (I have the kitchen aid commercial mixer) I did 15, and it was so limp that the second layer actually slid and had to be pushed back into place, so some of the strawberry / lemon showed at the back, which wasn't too pretty.
Whisk on medium to high speed for ~ 60 seconds (using either a paddle
attachment on a stand mixer, or whisk beaters on a hand mixer), until a homogeneous batter forms.
I use a low
setting on my stand mixer and stop to scrape the sides instead of waiting for it all to mix (which usually results in over beating and air bubbles)
Alternatively, using the dough
hook on a stand mixer, knead the dough for 7 - 10 minutes, or until elastic.
Immediately remove the bowl and place
it on your stand mixer with the whisk attachment, beating slow at first and gradually increasing the speed to high.
Slowly add in the wet ingredients to the dry ingredients, using setting 1
on your stand mixer.
In fact, when I kneaded it with the knead attachment
on my stand mixed, it was dry and crumbly as I added the dry ingredients.
Beat butter and 1/2 of the icing sugar for 5 minutes with either a paddle attachment
on a stand mixer, or with whisk beaters on a hand mixer.
When the dough is ready to roll, flatten one piece and knead it through the Pasta Roller attachment
on the Stand Mixer.
I turn the mixer on low until the sugars have mixed in a bit, and then switch it to med / high (
on my stand mixer a 6 or 8).
After the dough has rested, switch to the dough hook and knead on medium - low speed for 6 - 8 minutes (I use # 2 or # 3
on my stand mixer).
Using the whisk attachment
on a stand mixer, whip the eggs on high speed until very foamy and pillowey.
Add the speed back up to 10
on your stand mixer and mix up for another 30 seconds.
4 Change the attachment
on the stand mixer to the dough hook and knead until smooth, about 6 minutes, adding more flour if the dough begins to stick to the sides of the bowl.
