The phrase
"to coat both sides" means to apply a layer or covering substance to both the front and back of something.

Lightly
coat each side of the chicken with olive oil and sprinkle it with salt and pepper.
I like to start checking at the 35 minute mark, and sometimes flip more than once to
coat all sides well and cook all sides well.
