What is a better way to close out the season than adding summertime tomatoes, fresh basil and fresh mozzarella cheese to a shrimp and
pasta with a mozzarella cheese sauce?
Spoon one tablespoon tomato puree into each mushroom, then spoon the spinach ricotta mixture, again one tablespoon tomato puree and finally top the
mushrooms with mozzarella cheese.
