I do love it plain too, especially in a mixture
of other roast vegetables - courgette, peppers + red onion is my favourite mix.
And while I still prefer
most other roasted vegetables in their naked state, roasted cauliflower turns into quite the showstopper when topped with a bright, Indian tomato sauce.
Once you get to this point, roasts them the same way as roasted broccoli florets or
any other roasted vegetables: toss in extra-virgin olive oil, put on a baking sheet in a single layer and bake in a 400F oven for about 35 minutes, or until soft and browned.

Try adding it to
any other roasted vegetables, meat or salads — it's delicious!
I added frozen corn and
other roasted vegetables.
The roasted green beans and broccoli can be replaced by
any other roasted vegetables, and you can play around with the addition of other types of greens, herbs and spices.
Here we chose a colorful combination of roasted sweet potatoes and baby spinach, but feel free to swap in the same amount of
any other roasted vegetables or greens.
