love little potatoes, they're amazing as a salad with so many different ingredients, as curry, as stew, roasted....
In my rendition, I decided to use kale, and I further mixed it up by turning the kale into pesto, and then turning the green potato mixture
into little potato cakes.
In fact, you can achieve fantastic results with just about any of their
unique little potato varieties, just make sure to adjust the baking time.

I think a dish that takes time to make, deserves a simple serving... I tossed these two colored
little potato pillows with extra virgin olive oil and topped with shaved Pecorino, a pinch of freshly grated black pepper and you are in heaven.

I roast these sprouts in small pieces
with little potatoes and a sprinkling of chilli flakes until both the sprouts and potatoes turn a beautiful golden brown, I then add in some roasted hazelnuts for a great nutty crunch before tossing everything with juicy pomegranates and a little maple syrup.

I was going to add a finely sliced shallot, but ended up forgetting it after slicing all

If mixture doesn't thicken, you can always add
a little potato starch (I didn't need to).
I'm a sucker for the Terrific Trio Creamer potatoes by
The Little Potato Company because the colors are so pretty, but any of their Creamer varietals would work.
Add more flour as you go (to both the dough and the surface you're kneading on), and smash up
any little potato lumps that you find.
The Little Potato Company's Creamer potatoes are so easy to use, I didn't even bother to peel them for this recipe, they go straight from the bag into a pot of water on the stove!
1.5 lbs of Creamer potatoes is about 4 cups (or 28 - 34
little potatoes.)
