in place of pumpkin in pies.
Hey Gina, Your paleo pumpkin pancake recipe is out of this world and I recently took home some thawed frozen blueberries and replaced the pumpkin with pureed blueberries and used extra coursely shredded coconut in
place of the pumpkin spice.
Which is all to say that swapping in another squash in
place of pumpkin for your pumpkin pie is not some kind of autumn sacrilege.
Just make sure the total quantity adds up to 3 cups total (you could use sunflower seeds in
place of the pumpkin seeds, sesame for flaxseed, peanuts for pecans, etc.).
Brazil nuts, almonds, hazelnuts and pine nuts would be great alternatives to the cashews and walnuts, and sunflower seeds, chia seeds and hemp seeds could be added in addition to or
in place of the pumpkin seeds.
Bet it would be good with sweet potato in
place of the pumpkin.
I actually use pureed squash a lot of the time in
place of pumpkin in all of my pumpkin recipes: I think it tastes better than pumpkin and I like the consistency better, it isn't as thick.
I bet this recipe would also work really well with zucchini (perhaps even shredded - zucchini bread style) in
place of the pumpkin.
1/4 cup pumpkin purée (you can also hack this recipe and use sweet potato in
place of pumpkin — pureed or baked and chilled or frozen)
I made a couple of substitutions though; I used pureed butternut squash in
place of pumpkin and almond butter instead of tahini.
You could easily swap in your favorite winter squash or pureed sweet potato in
place of the pumpkin, adjusting the sweetness as needed.
You can use your crock pot butternut squash for anything from butternut squash soup to baked goods (you can even use it in
place of pumpkin).
