Add roasted vegetables to the skillet, then pour the egg
mixture over the vegetable mixture and cook for a few minutes until the eggs start to set.
Having a few cubes with your salad or
sprinkled over vegetables isn't likely to cause any problems (unless you're lactose intolerant or allergic).
We love it because it is the perfect way to use up left
over vegetables before they even have a chance to go bad.
Many people prefer
fruit over vegetables, as most fruit is sweet, but keep in mind that fruit does contain sugar, so you don't want to eat too much.
Mix rice vinegar and sugar together in a small bowl and pour the liquid
over the vegetables tossing them in it so they are fully coated.
