Whisk garlic, lemon juice, oil, and cardamom in a small bowl and
pour over tomato mixture; toss to coat.
Pour
over the tomato sauce and the crumbled feta, drizzle with oil and sprinkle with fresh or dried basil and bake for 30 minutes at 350 °F.
I also forgot to save the pasta water for the sauce so I used up beef broth I had in the fridge and a bit of left
over tomato paste.
Give the salad a taste just before serving, and sprinkle a pinch of
salt over the tomatoes and cucumbers, if desired.
Having some left
over tomatoes from a recipe, I decided why not try some sun - dried tomatoes from scratch?
Spread tomatoes evenly inside the pocket, and arrange cheese
over the tomatoes so it fits mostly inside when the pork is pulled closed.
I think my favourite part is the tangle of basil and spinach leaves tossed
over the tomato base, but you can really stylise your pizza to suit whatever you want.
3 Add the tomato, bring back just to a simmer, then reduce the heat to low and cook for about 50 minutes, or until the liquid has reduced and thickened — place an inverted saucer or small plate
over the tomato halves to keep them submerged while cooking.
This is definitely a great way to use up some of the tomatoes that most gardens are growing (I'm still in mourning
over my tomato plants which have been obliterated by the deer, thank goodness one survived!)

Fast forward through a summer filled with lots of watering, staking, pruning, mulching, stressing over, and
fawning over those tomato plants to now.
I do want to add that I have always sprinkled a teensy bit of
sugar over the tomatoes along with the other ingredients as it cuts the acidity and if any of the tomatoes are a little unripe, this sweetens them up just a tad.
Note: I drizzled the remaining olive oil from the sauté
pan over the tomatoes and garnished them with additional chopped parsley.
