While potatoes are typically paired
with leek in soup, I prefer turnips — being a lower glycemic (less starch / sugars) root vegetable.

What Kind of Stock to Use for
Potato Leek Soup with Bacon You could use vegetable stock if you wanted to but the best thing to use is fresh chicken stock rather than using stock cubes.

METHOD: Heat olive oil in a deep - based frying pan and
