I noticed that you said to wipe the top
of the muffin tins to get the excess cooking spray off.
Bake for 20 — 25 minutes until a toothpick inserted in center
of a muffin comes out clean (unless it hits a blueberry).
Over the years I have evolved batches and
batches of muffins with cleaner and cleaner ingredients.
Bake for an additional 7 - 8 minutes, or until a toothpick inserted into
center of muffin comes out clean.
Spoon about a teaspoon or so of the batter into the
bottom of each muffin cup — enough to cover the bottom.
I love pretty much everything that comes
out of a muffin pan, and easy breakfasts for on the go are no exception!
Spoon evenly into each cup
of muffin pan, about half to 3/4 full.

You could add chocolate chips to the batter, but personally, we love leaving the
inside of the muffins for the strawberries.
